As Kettle Chips' chef, he travels worldwide to source raw ingredients and has tasted more than 220 varieties of potato.
Barnard spends the rest of his time in the firm's kitchen, experimenting with imaginative seasoning blends such as its Creme Fraiche, Lemon and Coriander flavour. He also tries out suggestions sent in by consumers.
At the moment, he is working on lines for 2008. These include a Crispy Bakes range, which has a strong flavour but fewer than 100 calories and less than 10% fat.
